Chicken Tikka Marsala & Cauliflower Rice

Ingredients
- 200g Chicken Breast
- 1/2 Onion
- Crushed Tomatoes
- Woolworths Tikka Spice
- 1 Tsp Olive Oil
- 3 Tbs Low Fat Yoghurt
- 1 Pkt Cauliflower Rice
- Chilies to Taste
- 1/2 Clove Garlic
- Salt, Pepper & Spices
Instructions
- Spice chicken with salt pepper and tikka spice, allow to rest
- Heat non stick frying pan and add tsp of olive oil
- Crush the garlic, dice the onion and the chillies
- Add to the pan and allow the onion to caramelise
- Add the chicken, allow to cook for a few minutes until coated
- Add the crushed tomatoes and allow to simmer
- Once cooked add the mange tout peas and yoghurt
- Add additional salt, pepper and spices to taste
- Heat the cauliflower rice in the microwave
- Serve with coriander
